Stew Pork Thai Style

Red Curry Paste and Yellow Curry Paste

Ingredients

  • 50g Dancing Chef Red Curry Paste
  • 50g Dancing Chef Yellow Curry Paste
  • 500g Pork Belly
  • 150g Pineapple (cut into bite size)
  • 30g Gula Melaka (Palm Sugar)
  • 40g Assam Paste (Mixed with water, discard the seed)
  • 20g Roasted Peanut (Coarsely Pound)
  • 30g Ginger (Julienne)
  • 15 Garlic (fresh or pickled)
  • ½ tbsp Dark Soya Sauce
  • 700ml Water

Directions

  1. Cut pork into cube, add in dark soya sauce, Red Curry Paste and Yellow Curry Paste. Marinate for 10 minutes.
  2. Heat pot, add in water, ginger, Gula Melaka and assam juice. Put to a boil. Add in pork, simmer till cooked and sauce thickening. Add in peanut, pineapple, garlic and simmer for 5 minutes. Remove from heat and serve.
