Ingredients
2 pkt Dancing Chef Red Curry Paste
2 tbsp Dancing Chef Yellow Curry Paste
1-1.2 kg Chicken (cut into pieces)
1 pkt Kiri Cream Cheese
2 tbsp Coarse Ground Black Pepper
6 Nos Tomatoes (cut into 4, removed seeds)
200ml Coconut Milk
500ml Water
1 cup Fried Shallot
1 pc Onion (cut into ring)
2 tbsp Shallot Oil
Directions
Marinate chicken with 1 pkt Red Curry Paste & 1/3 cup of fried shallots for 20 minutes.
Heat wok with 2 tablespoons of shallot oil,add 1 pkt Red Curry Paste, Yellow Curry, black pepper, stir fry over medium heat for 1 minute.
Add chicken pieces & Kiri Cream Cheese. Stir fry well, add water, bring to a boil.
Add tomato, onion & coconut milk, bring to boil then simmer till chicken is cooked. Then add in remaining fried shallots, serve hot with rice.
