Ingredients

  • 1 pkt Dancing Chef Hainanese Chicken Rice Paste
  • 450 g Chicken (cut into pieces)
  • 2 slices Ginger
  • 1 pc Garlic (medium size)
  • 1 pc Shallot (medium size)
  • 1 stalk Spring Onion
  • 5 tbsp Cooking oil
  • 4 tbsp Dark Soy sauce
  • 1 tbsp Chinese Wine (Shaoxing Wine)
  • 2½ cups Rice
  • 500 ml Water

Directions

Method
  1. Marinate chicken pieces with Chinese wine and ½ packet of Hainanese Chicken Rice Paste for ½ hour.
  2. Fry ginger, garlic, shallot for ½ minute in a rice cooker. Add rice and water. Set to cook.
  3. When the rice is half cooked, stir in the chicken, continue to cook until done.
To Serve
  1. Cut the spring onion into small pieces, lightly fry with 2 tbsp of cooking oil.
  2. Mix with dark soy sauce.
  3. Pour over the cooked rice, mixed well and serve
