Put Mackerel fish, prawns, shallots, lemongrass, coconut milk, ginger, fish sauce and Dancing Chef Red Curry Paste in a food processor and blend the ingredients until smooth.
Beat egg in a bowl until fluffy and slowly mix egg into the seafood mixture.
Add a bit of sugar and lime juice into mixture.
Place Snapper or fish meat on banana leaf. Put basil leaves on top of the fish meat then cover with seafood mixture. Wrap and bake in a preheated oven at 180°C for 20 minutes.
