Pineapple Prawn Curry

Tips: If you like more sour taste, add more assam skin or lime juice.

Ingredients

  • 15 pieces (about 600g) big prawns
  • 200g pineapple (cut into small pieces)
  • 3 cups water
  • 5 pieces assam skin
  • Sugar to taste
Spice Ingredients
  • 50g Dancing Chef Pineapple sauce
  • 1 packet Dancing Chef Thai Seafood sauce
  • 1 piece onion (cut into small pieces)
  • 1 piece lemongrass (cut into small pieces)
  • 1 piece chilli (minced)

Directions

  1. Mix the spice ingredients and set aside.
  2. Stir-fried the spices and lemongrass in 1 tbsp of oil until fragrant.
  3. Add pineapple, water and assam skin, stir over medium heat and simmer about 5 minutes. If the sauce is too thick, add a little water. With low heat and cook for 10 minutes.
  4. Lastly add in prawns and sugar and you can enjoy with rice.
