Ayam Rendang Padang (Chicken Rendang a la Padang)

Ingredients

  • 1 packet Dancing Chef Padang Rendang Paste
  • 450g Chicken
  • 1 stalk Lemongrass
  • 3 pcs Kaffir Lime Leave
  • 1 pcs Cinnamon Stick (1 inch)
  • 6 pcs Cloves
  • 2 pcs Star Anise
  • 400ml Water
  • 200ml Coconut Milk
  • 1 tbsp Desiccated Coconut (grind into powder form)
  • 5 tbsp Cooking Oil
  • Salt/ Pepper Season to taste

Directions

  1. Heat the oil in pot. Sauteed lemongrass and kaffir lime leaves until fragrant.
  2. Add in chicken, Padang Rendang Paste and stir well.
  3. Add in water, cinnamon stick, cloves, star anise and seasoning to taste.
  4. Lastly, add in coconut milk and desiccated coconut and simmer chicken until tender.
  5. Served with steamed rice.
