Ingredients

  • 1.8 kg Whole Chicken
  • 5 cloves Ginger
  • 1 tbsp Salt
  • 1.2 L Boiling Water
Chicken Rice
  • 1 pkt Dancing Chef Hainanese Chicken Rice Paste
  • 2 tbsp Cooking Oil
  • 2 slices Old Ginger
  • 1pcs Garlic
  • 2pcs Shallot
  • 400g Rice (Washed)
  • 800 ml Chicken stock (From cooking chicken)
  • 2 pcs Pandan Leaf
  • 1 tbsp Butter
Dancing Chef Chicken Rice Chilli Sauce
  • 2 tbsp Dancing Chef Hainanese Chicken Rice Paste
  • 10 Fresh red chillies
  • 6 Chilli padi
  • 1 Slice Ginger (thumb size)
  • 6 Garlic (chopped)
  • 5 to 6 tbsp Lime juice to taste
  • 50ml Ice water
  • Some sugar to tast

Directions

Chicken Rice
  1. Season chicken with ginger and salt in the stomach overnight.
  2. To cook the chicken, place it in a pot with boiling water, cover and simmer with low fire/heat for approximately 25-30 mins till cooked.
  3. Cook the chicken rice using a rice cooker and add in the cooking oil. Fry the ginger, garlic and shallots until fragrant.
  4. Add in rice, the Dancing Chef Hainanese Chicken Rice paste, chicken stock, butter, lemongrass and pandan leaf. Cook rice like usual.
  5. Chicken Rice served with Hainanese Chicken.
Dancing Chef Chicken Rice Chilli Sauce
  1. Blend all ingredients together in a food processor, till smooth add orange to taste.
